Cheese Börek

Ingredients:
For the Filling:
- 1 cup feta cheese (crumbled)
- 1 cup ricotta cheese or cottage cheese
- 1/2 cup grated mozzarella cheese (optional)
- 1/4 cup fresh parsley (chopped)
- 1/4 cup fresh dill (chopped, optional)
- Salt and pepper to taste
For the Dough:
- 1 package phyllo dough (thawed, typically 16 oz.)
- 1/2 cup melted butter or olive oil (for brushing the phyllo)
For the Egg Wash:
- 1 egg (beaten)
- 1 tablespoon water or milk
Instructions:
Prepare the Filling:
- In a bowl, combine the feta cheese, ricotta cheese, mozzarella cheese (if using), parsley, and dill. Mix well. Season with salt and pepper to taste. Set aside.
Prepare the Phyllo Dough:
- Preheat your oven to 375°F (190°C).
- Unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out.
Assemble the Börek:
- Brush a baking dish (about 9x13 inches) with melted butter or olive oil.
- Lay one sheet of phyllo dough in the dish, then brush it with more melted butter or olive oil. Repeat this process with 4-5 sheets, layering and brushing each one.
- Spread a portion of the cheese filling evenly over the phyllo dough.
- Continue layering the phyllo dough and brushing with butter or olive oil, placing another 4-5 sheets on top of the filling.
- Add another layer of cheese filling, then top with more phyllo sheets, brushing each layer with butter or olive oil. You should have several layers of phyllo dough on top.
Cut and Bake:
- Before baking, use a sharp knife to cut the Börek into squares or diamonds, cutting through all the layers.
- Mix the beaten egg with water or milk and brush the top of the Börek with this egg wash.
- Bake in the preheated oven for 30-40 minutes, or until the top is golden brown and crisp.
Cool and Serve:
- Allow the Börek to cool slightly before serving. It can be enjoyed warm or at room temperature.
