Potato and Ground Meat Casserole

Ingredients (for 2 servings):
- Potatoes - 700 g
- Ground pork and beef mix - 400 g
- Hard cheese - 80 g
- Green onions - 3-4 stalks (to taste)
- Eggs - 1-2
- Sour cream (optional) - 1-2 tbsp
- Salt - to taste
- Ground black pepper - to taste
- Vegetable or butter - for greasing the baking dish
Instructions:
- Prepare the Ingredients: Gather all the necessary ingredients. Peel and wash the potatoes and green onions, then dry them.
- Grate the Potatoes: Grate the potatoes on a coarse grater, then squeeze out the excess liquid.
- Layer the Potatoes: Spread half of the grated potatoes in a greased baking dish.
- Add the Ground Meat: Spread the ground meat over the potatoes, and season with salt and pepper to taste.
- Chop the Green Onions: Finely chop the green onions.
- Add the Onions: Sprinkle the chopped green onions over the ground meat layer.
- Grate the Cheese: Grate the cheese on a coarse grater.
- Mix with Potatoes: Combine the grated cheese with the remaining half of the grated potatoes. Add the egg(s) and mix well. Season with a bit more salt and pepper.
- Optional Sour Cream: If desired, add sour cream to the potato mixture for extra flavor.
- Top the Casserole: Spread the potato and cheese mixture over the ground meat layer, and smooth it out with a spoon.
- Bake: Preheat the oven to 180°C (350°F) and bake the casserole for about 1 hour, or until golden brown.
- Serve: Serve the potato and ground meat casserole immediately after baking. For an extra kick, serve it with mustard.
